
Here’s a tasty bread recipe that’s easy to make using the dough setting on your bread machine:
1 cup warm water
1 Tbs olive oil
1/2 tsp salt (at high altitude increase to 3/4 tsp)
1 tsp sugar
1-1/2 cups white flour
1 cup whole wheat flour
1 tsp bread machine yeast (at high altitude reduce to 3/4 tsp)

1-2 cloves garlic, crushed, or to taste
1/8 cup grated Italian cheese (I used a combination of Mozzarella and Parmasean)

1 Tbs olive oil
3/4 tsp rosemary leaves, or to taste
1/2 tsp salt
Add the first set of ingredients to the bread machine in the order indicated. Set on the dough cycle and let it run, adjusting the texture with water or flour so you get a nice dough ball during kneading.
(You can easily double this recipe if you have a bread machine that makes 2-pound loaves. Just watch, as the dough rises, to ensure it doesn’t rise above the top of the pan. If it does, just punch it once to let some air escape, then let it keep rising.)
When the cycle finishes, remove the dough and place it on a floured breadboard. Place the second set of ingredients on the dough and knead them in thoroughly.
Butter and flour a 10″ cake pan (or similar baking pan). You can use olive or canola oil for greasing if you prefer. Flatten the dough and fit it into the pan. Cover the pan with a lid or with plastic wrap and let the dough rise 20 minutes.
Make indentations throughout the top of the dough by stabbing it (gently) with your finger. Then, using the third set of ingredients, brush the top with oil and sprinkle with rosemary and salt. Preheat the oven to 400 degrees. Cover the dough and let it rise for another 15 minutes.
Remove the cover and bake the dough in the pan for 20-25 minutes, until golden. It should sound hollow when you thump the bottom of the loaf.
Remove the loaf from the pan and cool slightly on a wire rack. Serve it hot with lots of butter. It also goes great with cheese!
