Chocolate(less) Pomegranate Cheesecake

Two pomegranates in our CSA’s vegetable basket this week, a going away party, and a tongue-in-cheek comment about a chocolate cheesecake combined to produce this yummy alternative dessert.  It has no chocolate and significantly less refined sugars than an ordinary cheesecake, but it’s definitely not low in fat.  And it’s delicious! Summer Recipe: Garden Pasta Salad

I’m not crazy about most pasta salads, but here’s one that emphasizes the flavors of the summer garden.  To save time, you can prepare the other ingredients while the pasta cooks. The flavor of the tomatoes is important, so use garden-fresh tomatoes, not store-bought ones.  If they’re not in season, you could substitute sun-dried tomatoes [...]

The organization’s website is difficult to navigate, but it does offer some information about the program: “Bountiful Baskets is not [...]

Animal Vegetable Miracle

Barbara Kingsolver reads the first chapter of her fabulous book about her family’s quest to eat only local food. It’s available at libraries, both in print and on CD– I highly recommend it.

Solar Dairying

The United Nations FAO offers this analysis of solar-powered dairy projects.  Their conclusion: It’s feasible, but not cheap.  Note that, in 1981 dollars, a cheese facility of the size we’re building would cost over $150,000.  That’s over $355,000 in 2008 dollars.  Using innovation, used equipment, comparison shopping, and just plain Yankee frugality, we’re putting ours [...]
